You know how some people love to put ketchup on EVERYTHING, thats tahini for us ! haha
This beautiful aubergine dish is inpired by feedfeed.
Ingredients:
- 2 large aubergines
- olive oil
- 2 tbsp zaatar
- sea salt
- 1 lemon
- 1 garlic clove
- pomegranate arils (for garnish)
- mint leave (for garnish)
- 2 tbsp tahini
- 1tbsp yoghurt (optional)
- handful of pine nuts
Method:
1. Preheat the oven to 180C. Half and score the aubergines. Place the aubergines on a tray and drizzle olive oil to cover them (don't be shy haha!). Spread the zaatar over the aubergines covering them. Sprinkle sea salt and squeeze some lemon over the aubergines to finish. Use a medium size pan to fry them for 2-3 minutes until golden brown.
2. Place them onto a tray (cut side up) and pop them in the oven for about 15 minutes. In the mean time make your tahini sauce and toast the pine nuts.
For the tahini sauce whisk together in a small bowl the tahini, water, a squeeze of lemon juice, garlic and yoghurt (yoghurt is optional, I like to add some to my tahini sauce to make it a little creamier). Season with salt.
3. Once the aubergines are ready, remove them from the oven and place them onto a large plate. Drizzle with tahini sauce and garnish with pomegranate arils, mint leaves and the toasted pine nuts. Serve. ENJOY!XXX
