Teriyaki salmon soba noodle

This beautiful salmon dish recipe was inspired by Gordon Ramsey. Everyone in our family loves seafood. If your anything like us, you will looooove this dish!!











Ingredients:

For the Teriyaki salmon:


-1 large piece of salmon

-Fresh root ginger finely sliced

-2 garlic cloves peeled and finely sliced

-3 tbsp soy sauce

-2 tbsp honey

-2 tbsp manuka honey

-1 tbsp mirin rice vinegar



For the Soba noodle salad:


-150g mangetout

-150g Edamame beans

-3 carrots peeled and sliced into ribbons (use a vegetable peeler)

-Little pieces of fresh root ginger peeled and finely sliced

-1 tbsp Sesame oil





Method:

For the Teriyaki salmon:


1. In a bowl, put the ginger and garlic and mix with the soy sauce, mirin rice vinegar, honey/manuka honey (I mixed the two honeys together) and a drizzle of olive oil.


2. Put the salmon in a dish, season well and pour the mixture over. Cover with cling film and set aside in the fridge to marinate for up to 2 hours, but at least 20 minutes.


3. In a large frying pan over a medium heat, drizzle some oil. Once hot, add the salmon (skin side down), cook for 2 minutes. Next pour the marinade and cook for a further minute. Turn over and cook on the other side for 3-4 minutes (In total I cooked the salmon for 10 minutes, turning on each side again for another minute or so), basting with the sauce so that the salmon is well coated. If the sauce becomes too thick, just add a little water.


For the soba noodle salad:


1. Cook the soba noodles using the packet instructions. When almost cooked, add the mangetout, edamame beans and carrots to the pan to blanch. Once the noodles are tender, drain.


2. Add all the remaining ingredients to the noodle mixture, season well and stir. Place the noodles on a plate and put the salmon on top. Spoon over any teriyaki sauce left from the pan. ENJOY!! XX
