Taste of the Middleast! These three dishes are full of flavour and beautiful spices. Once you've tried them, you wont stop (trust us, we know).
Ingredients:
For the Shish taouk /shish tawook:
- 4 chicken breast ( cut into large cubed pieces)
- 1/2 cup plain yoghurt
- 1 tbsp paprika
-1 tsp cinnamon
-1/2 tsp oregano
- 1/2 tsp ground ginger
- 1 cup lemon juice
- 1/4 cup olive oil
- 3 garlic cloves (minced)
- 1 tsp tomato paste
- salt and pepper to taste
- 1 yellow pepper
- 1 red onion
Method:
1. Cut the chicken into large cubed chunks. Mix the ingredients above all together well. Transfer the chicken into the sauce and mix well. Leave the marinade in the fridge for at least 4 hours.
2. Pre heat the grill onto a medium heat. Skewer the chicken , onion and pepper then grill them for 15 minutes or until they are no longer pink in the center. Remove from the grill and serve either still on the skewer or removed.
Ingredients:
For the muhammara:
-2 red bell peppers
-2 tbsp virgin olive oil
-3/4 cup walnuts
- 2 tbsp Aleppo pepper ( I used paprika, unfortunately I didn't have any Aleppo pepper)
- 1 garlic clove (minced)
- 1/2 cup breadcrumbs
- 1 or 2 tbsp lemon juice
- 3 tbsp pomegranate molasses
- 2 tsp cumin
Method:
1. Pre heat the oven to 190c and roast the peppers for 20 to 25 minutes or until the outside of the pepper has blackened. Cover them in silver foil and let them cool for 10 minutes, then peel away the skin and remove the seeds and core. Set aside.
2. Put the walnuts, garlic, pomegranate molasses, olive oil ,lemon juice, paprika, cumin and breadcrumbs into a food processor and whiz. Then add the peeled peppers and whiz again until mixture becomes smooth. You can always add olive oil if the mixture is too thick.
3. Serve with a drizzle of olive oil , dusting of paprika spice and a sprinkle of chopped walnuts. Totally optional add what you like.
Ingredients:
For the batata hara (spicy potatoes) :
- 3 potatoes (cut into little cubes)
- handful of coriander
- 4 cloves garlic
-2 tbsp olive oil
- 1/4 tsp cayenne pepper
- 1 tbsp lemon juice
Method:
1. Cut the potatoes into tiny cubes and fry them until they become crispy and golden brown. Set aside
2. In a large frying pan add the olive oil and heat . When ready add the garlic and coriander and fry for about 2 minutes. Then add the lemon juice , paprika and seasoning.
3. I added the potatoes back into the frying pan , then I served. Up to you if you want to do it that way or pour the sauce over the potatoes. ENJOY!XXX
