Seafood chowder

Raining outside, wind howling... what a miserable day!


In the mood for a hearty soup. What’s better than a seafood chowder: creamy silky soup with prawns, haddock and cod.


I wanted to use my new dishes and I’m pretty happy with how the colours of the chowder go so well with the green.







Ingredients:

- 2 tbsp olive oil

- 1 onion chopped

- 1 carrot diced

- 1 celery sticks diced

- 3 garlic cloves minced

- 1 medium waxy potato diced

- 1 tbsp flour

- 1L fish stock

- 150ml milk

- 50ml cream

- 1tsp fennel seeds

- 1 tsp dried thyme

- Pinch of nutmeg

- 1 bay leaf

- Salt and pepper to season

- 100g haddock cut into cubes

- 100g salmon cut into cubes

- 100g cod cut into cubes

- 100h large prawns

- Coriander for garnish

- Toasted sourdough to serve


Method:

1. Heat the oil in a large pan over a medium heat then add the onions , garlic followed by carrots , celery and potato. Then add the fennel seeds and thyme and sweat them for 10 minutes.


2. Stir in the flour and cook for 2 mins to get rid of the flour taste. Pour in the fish stock and simmer for 10 minutes . Add the milk and the nutmeg and then add the fish mix and simmer for another five minutes .


3. Lastly, add the prawns and cream and simmer for a couple of minutes . Adjust the seasoning.


4. Pop the sourdough slices into the oven with olive oil drizzled over and sea salt.

Serve and garnish with coriander. ENJOY! XXX
