Roasted cauliflower with tahini sauce,parsley and pomegranate seeds

I had some leftover tahini sauce from the beef fatteh so I thought of mixing it with roasted cauliflower. Its such a delicious dish and very simple to do. I would eat the whole plate to myself if no one was around...








Ingredients:

-1 cauliflower

-tahini sauce

-handful of pomegranates

- handful of pine nuts

-flat leaf parsley (few for garnishing)

-olive oil

-salt flakes

-butter




Method:

1. Pre heat the oven to 160C. Cut up the cauliflower into small pieces, place on a tray then drizzle with olive oil and sprinkle with salt flakes. Put in the oven and roast for about 30 minutes.


2. In a saucepan over a medium heat, add a little bit of butter and pine nuts and fry for a few minutes until golden in colour.


3. Place the cauliflower on a plate. Drizzle the tahini sauce (the amount of sauce on top is up to you), add the pine nuts, pomegranate and garnish with a few leaves of parsley. ENJOY!! XXX
