Red velvet cookies with Milky bar buttons

I think everyday should be a cookie day, wouldn't you agree? Just don't think about the amount of calories, cookies bring happiness!!! Recipe inspired by Crumbs and Doilies red velvet NY cookies.







Ingredients:

-230g cold salted butter

-160g caster sugar

-160g light brown sugar

-300g Milky bar giant buttons

-475g plain flour

-25g cocoa powder

-3 tsp baking powder

-2 large eggs

-1 egg yolk

-1tsp vanilla

-1tsp extra red food colouring paste




Method:

1. In a stand mixer, gently break down the butter for 30 seconds using the paddle attachment on a low speed then add the sugars on a low speed to combine. Next, on low speed gently combine the Milky bar buttons. Next, sieve the flour into a separate bowl and thoroughly stir through the cocoa powder and baking powder then add to the stand mixer and set to medium speed to combine until you have achieved a sand like consistency.


2. In a separate bowl whisk together the eggs, vanilla and food colouring then pour into the stand mixer bowl and combine on a medium speed until your food colouring is evenly distributed and the dough is coming away from the sides. Using food gloves, weigh 112g of ingredients and roll in your hands to make a ball. You will get 13 balls. Pop in the fridge for 20 minutes.


3. Pre heat the oven to 180C fan with a lined baking sheet inside. Place the cookie balls onto the pre heated baking sheet and bake for 14 minutes. The cookies will spread so be sure to leave a bit of room round each one (I baked mine 5 at a time so they didn’t merge in the oven). You can also freeze the cookie balls individually by wrapping them in cling film and then bake a cookie as and when you fancy it. ENJOY!!! XXX
