After eating qatayef yesterday (still full), I think we are in need of something light...DID SOMEONE SAY SALAD?! I love salads, you can literally use any type of ingredient whether its cheese, nuts, fruit..the list goes on. Lets go extra and add some strawberries and watermelons in our salads today!! (Strawberry salad recipe inspired by ambitious kitchen).
Ingredients:
For the salad:
-1/4 cup walnuts, toasted
-1 package wild rocket
-1 heaping cup strawberries, halved
-1 large peeled orange, sliced
-1/4 cup feta cheese crumbles
-1/2 avocado, sliced or diced
For the dressing:
-juice from 1 large orange
-2 tbsp olive oil
-1 tbsp apple cider vinegar
-2 teaspoon honey
-1 garlic clove, finely minced
-1/2 tsp Dijon mustard
-1/2 tbsp poppy seed
-pinch of salt
Method:
1.For the dressing add the orange juice, oil, apple cider vinegar, honey, garlic, Dijon mustard, poppy seed and salt to a bowl and mix until well combined. Set aside.
2. On a medium heat, toast the walnuts in a sauce pan for 5 minutes or until they become golden in colour. Make sure to stir now and again to prevent the walnuts from burning. Once finished set aside and leave to cool.
3. In a large bowl, add the wild rocket, halved strawberries and sliced oranges. Then pour over the dressing and toss to combine. Lastly, top salad with crumbled feta cheese, sliced avocado and toasted walnuts.
Water melon feta mint salad with a honey balsamic dressing:
Ingredients:
-2x 380g watermelon chunks
-/2 red onion, sliced thinly
-1/2 cup feta cheese, crumbled
-handful of mint chopped
-pinch of black pepper and salt
-1 tsp olive oil
-1/2 tsp honey
-2 tsp balsamic vinegar
Method:
1.Place the watermelon, crumbled feta, red onion and mint into a bowl and gently toss.
2. For the salad dressing, mix the olive oil, balsamic vinegar, honey, salt and pepper together and drizzle over the salad. Mix again and sprinkle some chopped mint (optional).
3. Refrigerate before serving. ENJOY!!!XXX
