Mujadara

Eid Al Adha is just around the corner , so this dish would be perfect for family sharing!


Mujadara (مجدرة) is a super easy , vegan friendly , delicious Middle-Eastern lentil rice dish topped with caramelised onions . Might not be the prettiest looking dish , but it sure is packed full of flavour , a real crowd pleaser ! 💛💛






Ingredients :
  • 50g basmati rice

  • 250g green lentils

  • 2 or 3 Onions thinly sliced

  • 2 tbsp olive oil

  • 1/2 tsp turmeric

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp sugar

  • 3-4 cloves.

  • 1 tsp cumin seeds

  • 1 tsp coriander seeds

  • Handful of parsley to garnish



Method :


  1. Thinly slice your onions , dry them with kitchen paper and fry until caramelised (dark brown). Set to the side .

  2. Toast fry the dry spices , cumin and coriander seeds until they give off their aromatic smell. Then grind them and leave to the side .

  3. Wash the lentils and put them in a pan with water , boil and simmer until they are cooked to your liking . Then rinse them and set aside .

  4. Wash the rice few times to remove the starch. Then put it in to a pan with 2 tbsp olive oil , the ground seeds , turmeric , cinnamon , nutmeg , sugar and also 3 to 4 cloves. Fry the rice a little then add 325ml of hot water. Season to taste. Let’s it boil then simmer until rice is cooked. Remove from the heat but keep the pan covered for 10 mins before fluffing the rice .

  5. Now let’s assemble . Add the rice and lentils together and half of the onions to the mixture and stir. Top with the remaining onions and parsley. Ready to serve . Can be eaten with a side of yogurt (optional ). ENJOY! XX
