The flavours of the fig , syrup , white chocolate mascarpone along with the crispy kataifi just marry so well together . Perfect bank holiday treat !
Hope you all have a lovely weekend !
Ingredients :
Quick note - the ingredients for the syrup is to your taste whether you want to add more or less orange blossom/ juice or honey etc .
- pack of figs ( I only used 2 )
- 1/2 cup mascarpone
- 1/2 white chocolate
- 1/2 cup double cream
- 1 pack Kataifi pastry
- Handful of pistachios
- 1/4 cup of sugar
- 3tsp orange blossom
- 1/2 cup honey
- 1/2 cup of orange juice
- 3/4 cup water
- Butter
Method:
1. Firstly make your syrup . Heat a small pan on a high heat and add the water , sugar , orange juice, blossom and honey . Bring to the boil then turn it down to a simmer until the syrup turns a little thick and syrupy like texture . Add the figs into the syrup to cook a little bit . Leave it to the side , you can heat it up a little later .
2. To make the kataifi discs, I took a chunk of the pastry and shaped it into a nest like shape on a plate until I was happy with it. You can do the same until you’re happy with your shape. Don’t worry if they don’t look like nests , mine didn’t either haha. Melt a piece of butter in the microwave then pour the melted butter over the nest to cover. Heat a pan to medium heat and cook the nests on both sides until golden brown . I made 4 in total .
3. For the white chocolate mascarpone - whisk the cream , melted white chocolate and mascarpone in a bowl . Place in the fridge once finished.
4. Chop the pistachios . Now we can assemble the dessert .
5. Place the nests ( 2 each) on your plate . Then pipe the white chocolate mascarpone on top ( if you don’t have piping bags then you can spoon the mixture on top of the nest). Place 2 figs on top and then drizzle your cooled down syrup and chopped pistachios . ENJOY Xx
