We used to eat this dish when we lived in Saudi. It is very tasty and full of flavour! This recipe is from Mario Karam. Love it!
Ingredients:
For the labneh:
- 500g Full fat Greek yoghurt
- olive oil
- zaa'tar spice
- Salt
- Chilli flakes
Method:
1. Mix a pinch of salt into the yoghurt. Then take a muslin cloth (if you don't have one you can use a cloth napkin, pillowcase or a bandana), sieve, large bowl and line the sieve with the muslin cloth and pour the yoghurt on top.
2. Then twist the cloth and make a knot so it forms a ball (yoghurt ball).
3. Put the bowl with the sieve placed on top and the yoghurt ball in the fridge for 12-24 hours. The longer you leave it, the thicker the consistency.
4. Once the labneh is ready, remove it from the cloth and scoop out the labneh onto a plate. Roll them into balls using the palm of your hands, do this gently as the mixture can be quite delicate. Try to roll them of similar size. Once you have finished, then roll them into the chilli flakes or zaa'tar spices. Then place them on a plate and drizzle olive oil over them. Leave them in the fridge before serving.
For the manoush za'atar bread:
Ingredients:
- 4 cups plain flour
-2 tsp seal salt
-1/2 cup lukewarm water
-1 tsp yeast
-1 tbsp sugar
-1 tbsp olive oil
-1/2 cup za'atar
-1/2 cup olive oil
Method:
1. In a large bowl put the flour, sea salt, yeast, sugar, water and olive oil and mix. Then knead the dough using your hands for about 10 minutes.
2. Place the dough in a clean bowl and lightly oil it. Cover the bowl with a tea towel and leave it to rise in a warm area for an hour.
3. Heat the oven to the highest temperature. Lightly flour your work surface and roll out the dough into a round slab making sure its thin. In a small bowl, combine the za'atar and olive oil and mix.
4. Spread 3 tsp of the za'atar mixture onto the dough spreading quite thickly (no need to be shy with the spreading haha).
5. Place dough onto a baking tray and put into the oven for 7-10 minutes. ENJOY!!XXX
