Kabsa is a very popular dish in Saudi Arabia full of flavour and spices. This recipe is inspired by many lovely people I met in Saudi.
Ingredients:
- Whole chicken ( I used a hole chicken but cut up the pieces I wanted to use so I use the leftover chicken for another recipe I had in mind haha)
- 2 tbsp sunflower oil
- 1 tsp ground coriander
- 1/2 tbsp paprika
- 1/2 teaspoon tumeric
- 1 teaspoon ground cumin
- 4 whole cloves
- 2 cinnamon sticks
- 2 bay leaves
- 3 cardamom pods (crushed)
- 1 garlic clove (crushed)
- 1 large onion (diced)
- 2 tomatoes (chopped)
- 2 tbsp tomato paste
- 1 cup basmati rice washed then soaked in water for 15 minutes
- 2 cups chicken stock
- handful of whole blanched almonds
- handful of cashew nuts (optional)
- couple of parsley sprigs for garnish (optional)
- Pinch of Saffron for the rice
quick side note : (I used a whole chicken and roasted it in the oven for 50 minutes but you can just buy the pieces you need such as legs, breast. the directions below are for just the chicken pieces).
Method:
1. Heat the oil in a non stick medium size pan , add all the spices and stir for 2 minutes. Then add the garlic and onions and stir for 3 minutes.
2. Place the chicken pieces in the pan and cook for about 3 minutes turning on both sides. Then add the rice, saffron, tomato paste, chopped tomatoes, season and stir making sure everything is mixed in well together.
3. Pour the chicken stock and bring to the boil , then reduce to simmer and cover, leaving it for 30 minutes.
4. Fluff with a fork and garnish almonds, cashews, raisins and parsley. ENJOY!!!XXX.
