We joined the banana bread baking gang finally! This bread is so tasty and nutty. Perfect with a cup of coffee. Recipe inspired by India Hattersley.
Ingredients:
- 175g olive oil spread melted
- 2,3 or 4 ripe banana (leave one banana to use for the top of the bread)
- 100ml honey (extra for drizzling)
- 175g self raising flour
- 100g walnuts (chopped, I like walnuts but you can use any type of nuts)
- 3 eggs
- 1/2 tbsp vanilla essence
- pinch of salt
- 150g fruit muesli
Method:
1. Pre heat the oven to 180C . Grease and line a loaf tin. Mash up the bananas in a large bowl then pour in the melted olive oil spread, honey, vanilla essence and eggs. Mix well then add the muesli with 85g of chopped walnuts (or whatever nut you choose). Leave the mixture to thicken for 5 minutes.
2. Sift the flour into the banana mixture and fold with a large wooden spoon. Then pour the mixture into the loaf tin. With the remaining banana, slice it lengthways and place along the top of the bread. Brush them over with olive oil spread. Scatter the remaining nuts and muesli.
3. Bake for an hour until golden brown and the inside is cooked. Let it cool for 30 minutes then remove from the tin and leave it to cool. Whilst the bread is still warm drizzle some honey over the bread and if you have any more nuts or museli left , do some more scatterring ( I did, maybes a little too much haha) . Slice and serve.
