If you don't mind getting your fingers dirty, then this is the dish for you. Beef in a delicious honey sauce, oozing with Asian flavours!! Take your lettuce, napkin and get stuck in!!!
Ingredients:
- 3/4 -1 pound very thin cut beef
-2 tsp sesame oil
-1/3 cup carrots, diced
-1/ cup cashew nuts, finely chopped
-1/4 cup soy sauce
-2 tbsp honey
-1 tbsp white rice vinegar
-1 tsp minced garlic
-1/4 tsp ground ginger
-1/2 crushed red pepper flakes
-1 head sweet gem lettuce
-sesame seeds
-2 tbsp green onions, finely hopped
Method:
1. On a chopping board, finely chop the beef into pieces. Also chop the cashews and dice the carrots. In a large pan drizzle sesame oil and put the beef, carrots and cashews in the pan and stir over medium-high heat for 5 minutes, until the beef becomes brown.
2. Whilst the meat is cooking, get a bowl and put the soy sauce, honey, white rice vinegar, garlic, ground ginger and crushed red pepper flakes. (I added another 2 tablespoons of honey, that's just my own preference.. I like sweet sauces), stir well. Then add the mixture to the beef and sauté over medium heat for 3-5 minutes.
3. Sprinkle with sesame seeds and green onions. Scoop the beef mixture into the lettuce leaves and serve. ENJOY!!! XX
