Giving our oven a bit of a holiday haha. This salad is so refreshing , colourful , healthy and summery .. delish.
Ingredients :
- 1 pack of asparagus
- Pine nuts (handful)
- Rocket, baby spinach and watercress salad
- Lemon juice
- Olive oil
- Burrata cheese
- Half a Red onion
Method:
1. Put your grill onto a high heat. Place the asparagus on a tray and drizzle olive oil and sprinkle sea salt over them. Place the tray of asparagus under the grill for a few minutes ( totally up to you how long you grill them for.)
2. Toast the pine nuts for a few minutes. Slice finely half of the red onion. (You can do both whilst grilling the asparagus).
3. To plate up , scatter the salad leaves (rocket, baby spinach and watercress ) on the plate. Place the grilled asparagus on top. Place the finely sliced onions around the salad. Squeeze some lemon juice over the salad. Then pop your burrata on the asparagus. Open it up a little (if you like). Sprinkle the pine nuts over the cheese and salad. Drizzle a little olive oil over the burrata. (you can plate up however you like, doesnt have to be how I did it haha). ENJOY! XxX
