Ginger spiced cupcakes with mixed spiced buttercream and homemade little gingerbread men.

The best thing about Christmas is that you can really go over board with everything ! Spices, buttercream , cakes, decor , amount of cupcakes you eat haha. So with all the beautiful festive posts on our newsfeed thought it was time to post something a little festive ourselves ..


Ginger spiced cupcakes with mixed spice buttercream and homemade little gingerbread men.







Ingredients:

For the cupcakes:

- 200g self raising flour

-150g dark soft brown sugar

- 200g unsalted butter

- 3 eggs

- 1/2 tsp cinnamon

-1/2 tsp garam masala

- 1/2 tsp mixed spice

- 1/2 tsp ground nutmeg

- 1/2 ground ginger

- 2 tbsp whole milk

- 12 cupcake cases



Method:
  1. Preheat the oven to 160C (fan)

  2. Have your 12 cupcake cases ready on your baking trays.

  3. Mix the butter and sugar together until light , pale and fluffy.

  4. Sift the flour and spices , gradually add the eggs along with the milk.

  5. Divide the mixture into the cupcake cases . Don't fill it up to the top. Bake for 20 minutes.

  6. Take them out of the oven, check with a matchstick if cooked. You’ll know if the stick comes out clean. Let them cool.


For the buttercream

(It’s your choice the amount of spices you decide to use in the buttercream, if you feel your cupcakes are spiced enough, then put less spices into your butter cream).



- 230g softened unsalted butter

- 3 cups icing sugar

- 1 tsp cinnamon

- 1 tsp ground nutmeg

- 1 tsp mixed spices

- sprinkling of ground ginger

- piping bag


Method :
  1. Make sure the butter is soft. Leave out at room temperature.

  2. Mix the butter and sifted icing sugar together in a mixer .

  3. Once the mixture looks pale and creamy add the sifted spices .

  4. Decorate as you please on top of the cupcakes.

  5. You can add any decor you like . We added mini gingerbread men!. ENJOY!!! XXX
