Ginger, almond and white chocolate cookies!
Ginger biscuits are a big YES in our family, we love ginger. So I thought of adding something sweet and nutty to see how it tastes. The combo is delicious yet not too sweet. It’s a cookie that doesn’t make you feel guilty for having more than one!
Ingredients:
The ginger biscuit:
-125g unsalted butter softened
-1/2 cup soft brown sugar or muscovado sugar
-2/3 cup golden syrup
-2 1/2 cups plain flour (and extra for rolling)
-3 teaspoons ground ginger and/or sweet mixed spice
-1 teaspoon bicarbonate of soda
The rest:
- 1 cup crushed almonds
- 100g white chocolate pieces
Method:
1. Pre heat the oven to 160C. For the ginger biscuit, in a saucepan on a low heat mix together the butter, ground ginger, golden syrup, sugar and bicarbonate. Once melted take off the heat and add the sifted flour. Mix well until combined.
2. Once a dough is formed, add the crushed almond and the white chocolate pieces and mix again. With your hands, make small balls and place on a baking tray with baking paper (I usually make 6 balls for a tray).
3. Place in the oven for about 10 minutes. ENJOY!!! Xxx
