Falafel curry

When the MiddleEast meets India ! This recipe is inspired by delicious magazine. A deliciously different dish!




Ingredients :

For the falafel :

- 300g chickpeas soaked in water overnight and drained

- 1/2 onion

- 2 cloves garlic

- Bunch of coriander and parsley

- 1tsp cumin

- 1tsp ground coriander

- 1/2 tsp bicarbonate of soda

- 1/2 baking powder

- Seasoning


Method:
  1. Add all the ingredients into a food processor except the baking powder . Always add the powder before shaping the falafel. Whizz.

  2. Leave the mixture in the fridge for an hour.

  3. Add the baking powder then shape your falafel into balls.

  4. Cook them in vegetable oil . Set aside.


For the curry :

- 3/4 garlic cloves minced

- 1 teaspoon ground cumin

- 1 teaspoon salt

- 1 tsp ground coriander

- 1 tbsp ground turmeric

- black pepper to taste

- 2 tbsp vegetable oil

- 1/2 tsp fresh ginger minced

- 1 tbsp garam masala

- 1 cup coconut milk (optional)

- 1 red chilli chopped (optional)

- 2 tbsp tomato purée

- salt to taste

- Splash of water

- Handful of spinach (your choice the amount)

- Yoghurt to serve


Method:
  1. Make your falafel balls , cook them then set them to one side .

  2. Wash the spinach. Chop your garlic, ginger,chilli and place them along with your spices, vegetable oil, tomato puree into a mini processor. Blend to make a smooth paste. Add a splash of water if it becomes to thick.

  3. Heat up a medium size frying pan with a drop of vegetable oil. Add the curry sauce , and coconut milk abs leave it to simmer for about 10 minutes .

  4. Then add the spinach and falafel balls. Coat them in the sauce . Season to taste. Leave them to simmer for a couple of minutes until the spinach has wilted and the falafel balls are heated ( don’t leave it too long).

  5. Serve with yoghurt (optional) , rice and bread. ENJOY !!! XXX
