✨Christmas Pavlova with a cranberry pomegranate cream and sugared cranberries✨


This dessert is an all round crowd pleaser. The meringue recipe is by Raymond Blanc . So simple and easy to make.

A very festive , pretty , creamy , fruity , sweet Christmas treat.





Ingredients :


-3 free-range medium egg whites - 6 drops of lemon juice - 100g caster sugar - 75g icing sugar, sifted

- Handful of cranberries (sugared for decor )

- 1/2 cup water

- 1 cup sugar

- 100ml double cream

- 1/2 cup pomegranate seeds

- 1/2 cup cranberries (for cream)

- 1/2cup white chocolate melted

- Rosemary sprigs for decor



Method:


  1. Whip your egg whites using an electric whisk. The egg whites should gradually foam , once this happens start adding your caster sugar slowly at a time. Add the lemon drops too. Whisk until the egg whites form soft white peaks . Then sieve the icing sugar into the meringue.

  2. Line a baking tray , preheat your oven to 120 /130C . Spoon all of your meringue onto the baking tray and spread it . Not to much though , give it some height. Pop into the oven for about an 1 - 1 hour 1/2 (Depending on your oven, so just keep an eye on it ).

  3. Once cooked , turn off the oven and leaving the meringue inside to cool down completely .

  4. To make the sugared cranberries. Boil a 1/2 cup of water to a cup of sugar until thick and a syrup like texture . Let it cool down , then pour on top of the cranberries . Leave it to soak for an hour. (Take out some of the syrup and leave it to the side for later). Add sugar to the cranberries and toss them. Make sure they are completely covered.

  5. To make the cranberry / pomegranate cream. Whip your cream , melt the white chocolate and add it to the cream. Leave in the fridge . Boil 1/2 cup cranberries and 1/2 cup pomegranate seeds , the remaining cranberry sugar syrup. Smash the fruits in the pan , once the mixture becomes thick , take it off the heat . Leave it to cool down. Strain the sauce through a sieve . Let it cool down completely .

  6. Take out your cream from the fridge , fold in the cranberry and pomegranate sauce.

  7. Time to assemble. Take your meringue out of the oven. Place the cream on top , spread it around. Then place your sugared cranberries . Drizzle the any remaining cranberry syrup around the cream and sugared cranberries. Stick the Rosemary sprigs . Sprinkle with icing sugar. ENJOY! XX
