Chocolate liquorice cake served with ice cream and berry compote

Chocolate liquorice cake served with berry compote and icecream


Our brother has a very sweet tooth , he loves desserts so this one should be a winner for him (or we will be very upset 😅)





Ingredients:


  • 100g dark chocolate

  • 125g Unsalted butter

  • 125g soft brown sugar

  • 2 medium eggs

  • 1 tsp Liquorice essence

  • 125g self raising flour

  • 25g cocoa powder

  • 1/2 tsp baking powder

  • Handful of mixed berries fresh or frozen

  • 1/4 cup sugar

  • Vanilla ice-cream to serve

  • Edible Gold leaf for decoration (optional)


Method :


  1. Preheat the oven to 180C . Line a baking tin.

  2. Melt the chocolate over simmering water and leave it to cool slightly on the side .

  3. Using a mixer and the paddle attachment or a hand whisk place the butter into the bowl and mix until soft . Add the sugar then whisk until light and fluffy .

  4. Then add the eggs , one at a time making sure they are mixed in properly . Sift the flour , cocoa powder and baking powder into the mixture , then gently mix together until smooth . Add the liquorice essence then the melted chocolate. Make sure the cake mixture is mixed well .

  5. Pour the mixture into the tin and bake for 40 minutes. Whilst baking we can make the berry compote.

  6. Place the berries into a medium pan along with 2 tbsp of water and sugar. Bring to the simmer over a medium heat. It should be ready once the fruit has softened and the juice thicken slightly ( looks a bit syrup like). Set aside to cool.

  7. Check the cake is ready buy inserting a toothpick , if it come up clean than it’s ready . Let it cool. Once cooked , break it up to serve with the ice-cream and berry compote . I wrapped some gold leaf around the piece of dark chocolate ( totally optional) . ENJOY ! XX
