Chilli con carne

A wonderfully delicious dish to use any leftovers. With us being in lockdown these were the only ingredients I had for chilli con carne. Feel free to add any other ingredients for your chilli dish.





Ingredients:

- 1 tinned red kidney beans

- 500g minced beef

-1 yellow onion

- Salt

- Pepper

- 2 tinned tomatoes

-1 beef stock

- 1 tbsp olive oil

- 2 pieces of chocolate (optional)

- handful of coriander

- 1 red chilli

- Basmati rice to serve



Method:

1. Heat the olive oil and fry the onions until golden brown and fry the chilli. Then add the meat and fry until fully cooked . Chop the tinned tomatoes to small pieces and add to the meat along with the beef stock , tomato puree. Add the chocolate (optional ) and season if needed. Bring the chilli to a boil then turn down the heat and let it simmer for 20 minutes. Keep checking on the sauce ,stirring it to make sure it doesn't dry out.


2. Drain and rinse the kidney beans using a sieve then add them to your chilli pot. Boil the chilli again let it simmer for 10 mins . Turn off the heat . Sprinkle the coriander over the chilli , serve with rice. Sprinkle coriander over the plate. (your choice) . ENJOY!XXX
