Burrata part 2

Watermelon summer salad with burrata, basil, mint, heritage jewel tomatoes, raspberries drizzled with an olive oil vinaigrette. Perfect summer dish!


Quick sidenote: The amounts I used for the salad and how you plate up is personal preference.


Ingredients:

- Watermelon fingers ( I used 3)

- Cucumber ( about 8 slices)

- Raspberries ( handful)

- Heritage jewels tomatoes (handful)

- Fresh Basil leaves (handful)

- Fresh Mint leaves (handful)

- 1 Burrata

- 3 tbsp Olive oil

- 1 tbsp Apple cider vinegar

- Salt and Pepper

- Half red onion (or less) finely sliced


Method:

1. Chop/slice the cucumber, red onion and tomatoes. Make the vinegarette. Place the basil leaves and some mint leaves on a big plate.


2. Place 3 watermelon fingers in the centre of the plate. Pop the burrata on top. Sprinkle some raspberries around the watermelon and place some cucmber, onions and tomatoes around the leaves.


3. Open your burrata (if you like) and drizzle the vinaigrette around your salad (dont be shy haha) and over the burrata. Place a couple of mint leaves on top of the burrata (open) for decoration. Season with salt and pepper. ENJOY! XXX
