Basbousa cake soaked in orange blossom and rose syrup

Basbousa is a deliciously moist cake full of flavours. The orange blossom and rose syrup just finishes it off!






Ingredients:

For the cake:

-110g butter

-280ml full-fat Greek yoghurt

-200g caster sugar

-240g whole wheat flour

-1 tbsp baking powder


For the syrup:

-300g caster sugar

-2 tbsp orange blossom water

-2 tbsp rose water

-cup of cold water


For garnishing:

-handful of chopped up almonds

-almond flakes

-rose petals




Method:

1. For the syrup, put the sugar and cold water into a pan over a medium heat and let the sugar dissolve. Then add the orange blossom water and rose water and bring to a boil. Once the syrup begins to boil, reduce the heat to low and simmer gently for 8-10 minutes. Remove from the heat.


2. Pre heat the oven to 180C. In a food mixer put the butter, yoghurt and sugar and mix. In a separate bowl, combine the flour and baking powder. Then carefully fold the butter mixture into the flour until well combined.


3. Spoon the cake mixture into a well greased tin and put in the oven for 25-30 minutes. Once baked, slowly pour the syrup on to the cake and let it absorb. Leave to cool. Garnish with almond flakes and chopped up almonds, rose petals are optional. ENJOY!! XXX
