Lunch with a BANG!! Bang bang chicken; we love a good salad especially during this warm weather. Tooo hot to have the oven on!
Ingredients:
-2 skinless, boneless chicken breast, cut into strips
-packet of sweet and crunchy salad
-cucumber, strips
-sunflower oil
For the sauce
-4 cloves garlic, grated
-1/4 cup soy sauce
-1/4 cup Chinese vinegar
-1/2 tsp salt
-1 tsp sugar
-1/2 cup peanut butter
-2 tbsp sesame oil
For the topping
- toasted sesame seeds and chopped up peanuts
Method:
1. Preheat the oven to 180C. In a sauce pan on a medium heat, drizzle some sunflower oil and start frying the chickens until browned. Then put them in the oven to finish off cooking for 20-25 minutes. Once cooked, leave to cool and set aside.
2. For the sauce, whisk all the ingredient together (If you feel the sauce is a little thick, just add a bit of water). Then shred the chicken, cut the cucumber into strips and chop up a handful of peanuts.
3. To assemble, place 2 handfuls of sweet and crunchy salad into a bowl. Add the shredded chicken and cucumber. Pour over the sauce (as much or a little a you want) and mix all together. Sprinkle some sesame seeds and the peanuts. ENJOY!!! XXX
